VARIETIES: 70% Chardonnay, 30% Sauvignon Blanc
TERROIR: The grapes for this wine come from a vineyard with unique microclimate. Both grape varieties in the blend are grown in our vineyards near the town of Kavarna. The Black Sea climate characterized by the constant breezes protects the grapes from a sharp rise in sugars and helps preserve the acidity. Farming is organic, following biodynamic principles.
WINE: The grapes are harvested in the middle of September. The cooler maritime climate in the area of Kavarna is an excellent opportunity to preserve the fresh sensation in the white grape varieties grown there. Fermentation takes place in separate stainless-steel tanks. After the processes of vinification and maturation are completed the two wines are blended in the appropriate proportion in order to achieve the full potential for development of the resulting wine.
