Varieties: 54% Merlot, 44% Shiroka Melnik Vine, 2% Syrah

Terroir: The vineyards are located in the lands of the village of Harsovo and the village of Kromidovo. The Merlot vineyards are 8 years old, while the Broad-leaved Melnik Vine vineyards are around 50 years old. This accounts for the elegant structure and terroir expression in the taste of the wine. The climate is warm thanks to the air currents coming from the Aegean Sea, but in the evenings cooler currents descend from the surrounding mountains, which contribute to the larger diurnal amplitudes. The vines are grown organically, following biodynamic practices, with the aim of stimulating healthy and deep root system growth. The total quantity produced is 11477 bottles.

Winemaking: Harvesting takes place separately for each grape variety and is entirely manual. It starts at the end of August with Merlot and finishes at the end of October with Broad-leaved Melnik Vine. Alcohol fermentation takes place in separate tanks, and the delicate structure of the two grape varieties determines that pre-fermentation maceration should take no more than three days. Post-fermentation maceration is done for only 3-4 days, in order to prevent excessive extraction of phenolic compounds. After reaching the desired organoleptic characteristics the wines are blended and bottled.
