VARIETIES: 47% Grenache, 44% Cinsault, 9% Syrah
TERROIR: The vineyards with Grenache, Cinsault and Syrah are located near the village of Harsovo, where the climate is warm but thanks to the air currents coming from the Aegean Sea and the cooler night currents descending from the surrounding mountains, large diurnal amplitudes are maintained. The soils are sandy and permeable, thus resulting in better drainage. The vineyards are cultivated adhering to biodynamic practices.
WINE: The parameters of each grape variety are monitored daily and harvesting takes place when optimal ripeness is reached. This usually happens in the middle of September. The three grape varieties are processed and fermented together in stainless steel tanks, at temperatures up to 15℃. The process is completed within 20 days, after which the wine goes through stabilization and extremely gentle treatments. The aim is to avoid decrease in the intensity of the taste and aromatic profile of the wine.
