Grape varieties: 50% Grenache, 30% Cinsault, 20% Syrah


TERROIR: The vineyards planted with Grenache, Cinsault, and Syrah are located near the village of Harsovo, where the climate is warm yet moderated by air currents from the Aegean Sea and cool night 
breezes descending from the surrounding mountains. These conditions create significant diurnal temperature variation, supporting balanced ripening. The soils are sandy and well-draining, contributing to vine health and concentration in the grapes. The vineyards are cultivated according to biodynamic principles, enhancing the natural expression of the terroir. The vines have been certified organic since 2024.

WINE: Ripeness parameters for each variety are monitored daily, with harvesting carried out at optimal phenolic and technological maturity, typically in mid-August. Two of 
the varieties are destemmed and co-fermented in concrete tanks under controlled temperatures up to 15°C, while Cinsault is vinified separately. Alcoholic fermentation is 
completed within approximately 20 days. The wine is then kept on fine lees (sur lie) for a period to enhance texture and complexity. Subsequent stabilization is followed by minimal intervention and gentle clarification, with the objective of preserving varietal character, aromatic intensity, and overall freshness.
