AYANO Viognier, Marsanne, Roussannе
Tasting notes from the sommelier

“Pale yellow in color with subtle greenish hues. The nose reveals delicate white flowers, accented by notes of acacia, alongside layers of white fruit such as cherry and peach. Vibrant and round on the palate, with a well-balanced structure and a multi-layered interplay of fruity and floral flavors, complemented by a touch of minerality. The finish is long and refined, leaving a lingering impression of freshness and elegance.”

Suitable foods

Ideal with antipasti platters, bruschetta, fresh cheeses, and tapas such as olive paste and focaccia drizzled with olive oil. It pairs beautifully with rich summer salads, Greek
style squid, grilled octopus, and tarama. The wine’s generous and expressive character makes it a versatile companion to a wide range of dishes.

Grape varieties: Marsanne 38%; Viognier 34%; Roussanne 28%

TERROIR: The grapes for vintage 2025 come from our vineyards located in the village of Harsovo, Struma Valley Region. The vines are planted on sandy and permeable soils. The climate there is characterized by high daytime temperatures and cool evening air currents that descend from the surrounding mountains. The vines have been certified organic since 2024.

WINE: The grapes are harvested entirely by hand at the end of August. Fermentation of the three varieties occurs simultaneously in concrete tanks over the course of approximately one month, with carefully controlled low temperatures to preserve their fresh, fruity aromas. After fermentation, the wine is aged on fine lees in concrete tanks for two months, with regular bâtonnage to enhance texture, complexity, and overall flavor profile.
