Varieties: 100% Pinot Noir
Terroir: The Pinot Noir vineyard spans 18 hectares and is located near the Black Sea, in the region of Kavarna. The Black Sea climate, characterized by constant breezes, helps protect the grapes from rapid sugar accumulation and preserves their acidity. Biodynamic practices are applied in the vineyards.
Wine: Hand-harvested and transported to a cooling chamber. Manual sorting on a sorting table, de-stemming, light crushing of the berries, and transfer to stainless steel containers. Cold maceration for about 2 days before and after fermentation. Part of the wine ages in 400-liter French oak barrels for about 5-6 months, while the rest is stored in stainless steel. Limited production of 2,110 bottles.
