Variety: 100% Sauvignon Blanc
TERROIR: The vineyards are located close to the Black Sea, in the area of Kavarna. Sauvignon Blanc occupies two parcels with different terroirs, covering a total of 26 decares. The Black Sea climate, characterized by constant breezes, protects the grapes from sharp sugar spikes and helps preserve the acidity. An interesting fact is that the grapes often have sea salt crystals on them. Biodynamic farming principles are practiced.
WINE: Hand-picked grapes are destemmed but not crushed to preserve the integrity of the berries, then pressed in an inert environment. Shortly after fermentation, batonnage is performed to create a sensation of volume and enhance the wine's complexity.
