“Bright, pale color with a delicate greenish hue. The nose is expressive, marked by a pronounced herbaceous character, complemented by fresh citrus notes and subtle tropical nuances beneath. The palate is well-structured and balanced, with a layered flavor profile and a distinct mineral edge. The finish is fresh and persistent, with a gentle saline touch that reflects the character of the terroir.”
Pairs beautifully with seafood salads and cold appetizers. Excellent alongside sushi, baked white fish, and grilled vegetables. It also complements fresh dishes such as tabbouleh, Fattoush, mozzarella salads, as well as preparations with spinach and asparagus. Light meats like chicken or turkey, served without heavy sauces, make an ideal match. Equally enjoyable on its own as a refreshing aperitif.
VARIETY: 100% Sauvignon Blanc
TERROIR: The Sauvignon Blanc grapes are grown in our vineyards near the town of Kavarna. Influenced by the Black Sea, the climate is marked by constant breezes that moderate sugar accumulation and help preserve natural acidity, while imparting a subtle saline note to the finish. The vineyard has been organically certified since 2024.
WINE: The grapes are harvested in mid-September. The cooler maritime climate around Kavarna helps preserve the freshness and vibrancy of the white varieties grown there. Fermentation takes place in concrete tanks, after which the wine remains on its lees in the same tanks for further texture, complexity, and aromatic enrichment.
