Varieties: 100% Petit Manseng
Terroir: The 9-hectare vineyard is located in the lands of the town of Kavarna, cultivated with strict adherence to biodynamic viticulture practices. The climate in Kavarna is Black Sea maritime, and the constant sea breezes have a beneficial effect on the vines, protecting the grapes from rapid sugar increase and maintaining acids in excellent condition. Petit Manseng is a grape variety primarily used for the production of dessert wines, mostly in Southwestern France.
Wine: The grapes are harvested at the end of October when the necessary technological characteristics are reached. Alcoholic fermentation is spontaneous and lasts about a month, in stainless steel vessels, under strict temperature control. 50% of the wine is aged in new French oak barrels for a period of 4 months.
