GRAPE VARIETY: 100% Early Melnik
TERROIR: Young vineyards in the village of Harsovo. Early Melnik is a hybrid of the Broad-leaved Melnik and Valdigé, created to produce a variety that ripens earlier while retaining similar characteristics to its parent varieties.
WINE: Hand-harvested grapes. Before alcoholic fermentation, cold maceration is performed for 5 days, with the grapes being placed whole into the fermentation vessels for gentler extraction. Malolactic fermentation occurs in stainless steel tanks, after which the wine is aged for 15 months in old French 400-liter oak barrels.
