Varieties: 100% Petit Manseng
Terroir: The 9-hectare vineyard is located in the lands of the town of Kavarna, cultivated with strict adherence to biodynamic viticulture practices. The climate in Kavarna is Black Sea maritime, and the constant sea breezes have a beneficial effect on the vines, protecting the grapes from rapid sugar increase and maintaining acids in excellent condition. Petit Manseng is a grape variety primarily used for the production of dessert wines, mostly in Southwestern France.
Wine: Hand-harvested in the last week of October. Fermentation is spontaneous, in stainless steel vessels for about 26 days. 25% of the wine is aged in 500L oak barrels for 3 months, after which it is blended. The result is a wine with a harmonious and rich profile.
