Terroir:The vineyards are located in the land of the village of Hersovo. The soils are low in humus with the specific for Melnik whitish light yellow color. The vines are grown organically by following biodynamic practices as the goal is to stimulate healthy and deep growth of the root system. The climate is warm with large diurnal amplitudes thanks to the air currents descending from the surrounding mountains and coming from Aegean Sea along the valley of the Struma River. The Mediterranean influence is a prerequisite for minimum precipitation in August and maximum after harvest (October-November). Work in the vineyards is mostly manual, which allows strict monitoring and quality control.
Vinification
The harvest starts separately for each variety and is completely manual. It starts at the end of August with Merlot and ends at the end of October with Shiroka Melnishka Loza. Alcoholic fermentation takes place in separate vessels, such as the structure and grape varieties determine the duration of maceration before her. After its completion, post-fermentative maceration is also applied different length of time for each variety to prevent excessive extraction of phenolic compounds. After reaching the desired organoleptic characteristics the wines are blended and bottled. The series is of 16920 bottles.

Due to the density of the wine, they are suitable for pairing dishes mainly with red meats. Variants of stew and kavarma from Bulgarian, Bolognese pasta, with ragout and Italian lasagna are excellent choices.
