40 % Chardonnay, 26 % Viognier, 18 % Marsanne, 16 % Roussanne
The grape harvest begins with the harvest of Marsanne, Roussanne and Viognier in the middle of August, and the Chardonnay grapes are picked at a later stage - in the first ten days of September. The first three varieties are fermented together as a sepage wine, and the last one - separate. The grapes are destemmed gently avoiding crushing of the berries to prevent the formation of any possible harsh aromas or taste of the wine. After the alcoholic fermentation, battonage is performed for creating a more complex profile. The two wines are blended only after reaching the desired specific organoleptic characteristics.
This Colorito blend is a wonderful summer wine that, thanks to its rich and complex profile, can be paired with a wide range of dishes - from salads with milk dressing, fish or seafood plates to dishes with cream sauce or soft cheeses. A fruit platter or a light fruit dessert would also be an excellent combination choice.
