This Colorito blend is a wonderful summer wine that, thanks to its rich and complex profile, can be paired with a wide range of dishes - from salads with milk dressing, fish or seafood plates to dishes with cream sauce or soft cheeses. A fruit platter or a light fruit dessert would also be an excellent combination choice.

Style: Dry White wine

Grape varieties: 40 % Chardonnay, 26 % Viognier, 18 % Marsanne, 16 % Roussanne

Vintage information: Alcohol – 12,67 % abv.; Residual sugars – 1,2 g/L; TA acidity – 5,96 g/L

Terroir: Chardonnay grapes come from the vineyards of Aya Estate Vineyards, located near the Black Sea shore in the north- eastern corner of Bulgaria. The region is characterised by a cool Black Sea climate and constant sea breezes, which help the grapes to retain their fresh and varietal character. The vineyard, from which the rest of the varieties originate, is located in the opposite south-western corner of Bulgaria’s map - near the village of Harsovo, Melnik region. Here the soils are predominantly sandy and permeable with good drainage, and the climate is characterised by high daytime temperatures and cool evening air currents descending from the surrounding mountains. Biodynamic practices are applied in both vineyards.

Vinification

The grape harvest begins with the harvest of Marsanne, Roussanne and Viognier in the middle of August, and the Chardonnay grapes are picked at a later stage - in the first ten days of September. The first three varieties are fermented together as a sepage wine, and the last one - separate. The grapes are destemmed gently avoiding crushing of the berries to prevent the formation of any possible harsh aromas or taste of the wine. After the alcoholic fermentation, battonage is performed for creating a more complex profile. The two wines are blended only after reaching the desired specific organoleptic characteristics.

Tasting notes

The colour is golden with slight greenish hues. The aroma is dominated by the floral notes typical for Viognier and Marsanne. The well-expressed acidity balances perfectly with the volume and density of the taste. The wine ends with a long aftertaste, with light mineral notes and leaves a pleasant feeling of freshness.
