Terroir: The vineyards are located in the lands of the villages of Harsovo and of Kromidovo. The vines of Merlot, Sangiovese and Early Melnik vine are young (5 years old) and the average age of Shiroka Melnik vine is 30 to 50 years. This contributes to the elegant structure and terroir expression in the taste of the wine. The climate is warm, thanks to the air currents coming from the Aegean Sea, but in the evening cooler currents descend from the surrounding mountains, which contribute to the larger diurnal amplitudes. The vines are grown organically following biodynamic practices, with the aim of stimulating healthy and deep root system growth.
Vinification:
The grapes are harvested by hand and separately for each variety - starting at the end of August with Merlot and finishing at the end of October with Shiroka Melnik vine. Before fermentation, a 3-day maceration takes place followed by alcoholic fermentation in separate tanks, at a temperature of about 24 degrees for 7-10 days. After fermentation, a second maceration is performed for no more than 2-3 days, in order to preserve the fruity character and prevent the extraction of coarse tannins. Part of the wines goes in contact with oak and after reaching the desired organoleptic characteristics, the wines are blended and bottled.

The wine would benefit when paired with lightly seasoned and drier meats, such as pork tenderloin, roast beef, chicken or filet mignon as they won't overshadow its fruity notes. Mushrooms or roasted vegetables are suitable, as well as gouda, cheddar or goat cheese. Desserts with a low sugar content are also an option for the more experimental connoisseurs.
