The wine has a typical not very deep red colour. The taste is a mixture of ripe sour cherry and red forest fruits nicely corresponding to the earthy nuances coming from the terroir. Terroir: The 1,8 ha vineyards are located in the region of Kavarna town, less than 10 km away from the Black Sea. The climate is dominated by the constant breezes from the Black Sea which helps keep the sugar levels and acidity in the grapes in balance. The soil is very rich and most of the work in the vineyards is directed towards keeping the growth of the vines less vigorous. It is mostly done by hand, which allows consistent control of the quality of the grapes. The philosophy of Seewines is to follow entirely organic and biodynamic principles - both in the vineyards and the vinification.
Vinification
Harvest is done by hand in small baskets at optimal ripeness of the fruits. The vinification is done at Damianitza Winery, under the strict instructions and quality control of Seewines’ enologists. Before the fermentation Pinot Noir passes through a period of cold maceration for four days, which adds more colour to the wine. After the malolactic fermentation one quarter of the wine matures in 400 litre French oak barrels, first and second fill, for 6 months.
