The wine has a slightly transparent but ruby red color. The aroma is dominated by notes of red fruits - raspberries, cherries and sour cherries, and the taste reveals pleasant herbal notes and the typical for Broadleaved Melnik grapes black pepper. The tannin structure is clearly present, but gentle and extremely elegant. The wine leaves a pleasant fresh feeling in the aftertaste. Serve slightly chilled, the wine can be consumed alone. It pairs perfectly with lighter white meats or fish, and is also a great accompaniment to vegetarian dishes.

Grape varieties: Melnik grapevines, Merlot, Syrah, Cinsault, Cabernet Franc, Pinot Noir
Terroir: The vineyards are located around the villages of Harsovo and Kromidovo, Sandanski region, on a terrain with predominantly southern exposure. The soils are low in humus with the typical for Melnik light whitish colour. The vines are grown organically by following the biodynamic practices and the aim is to stimulate the growth of the root system of the plants. The work is exclusively manual, which allows for strict monitoring and control of the quality of the grapes. The climate is warm with large diurnal amplitudes, and the surrounding mountains and air currents coming from the Aegean Sea have a direct impact on it.
Vinification
The hand-picked grapes ferment separately in stainless steel tanks. The alcoholic and the malolactic fermentation occur spontaneously. The wine does not go through a stage of ageing in barrels, which preserves the varietal character and freshness of the fruit.
