Colorito Sauvignon Blanc

The wine carries in itself the breeze of the sea and the salinity of the waves due to its proximity to the Black Sea - the vineyards are located less than 3 km from the beach. This is a wine that wins the hearts of the audience with its enviable individuality. In the glass you will find the characteristic herbal aromas, which are harmoniously combined with the distinct notes of grapefruit and lime and leave a feeling of tropical fruits and distinctive minerality. This is really a nice combination of Old and New World styles, which makes the wine extremely elegant andgentle, maybe a little shy, but fresh and stylish.

Terroir:: The grapes are grown in vineyards located near the Black Sea, in the territory of the town of Kavarna, in two separate plots with total area of 2,6 ha. The differences between them lie in the soil - one is typical black earth and the other is a combination of black earth and stony soil. The trellising system is Cordon Royat, which has proven to be an excellent choice for this variety. Interestingly, Sauvignon Blanc shows a very good adhesive ability, as evidenced by the sea salt crystals we often find on the vines. Another reason for this is the constant Black Sea breezes, which also contribute to preventing the sharp rise in sugars and preserving excellent acidity in the grapes.

Vinification

The harvest takes place in the first days of September, when the grapes reach the desired phenolic ripeness. The fermentation is carried out within 20 days at optimum temperatures for the specific grape variety. During the maturation of the wine for about 2 months, the so called batonage is performed (rising and stirring of the fine lees), with the aim to enhance the taste structure and to help for a multi-layered aroma. The wine was bottled on 02/04/2020.

Tasting notes

Sparkling yellow-straw colour with pleasant greenish glints of a young wine. The aroma reveals the characteristic for the variety pyrazine tones - green pepper and slight herbaceous notes. They harmoniously combine with the second sense of tropical fruit, peach, and green apple. The taste is lively with juicy acidity, but at the same time leaves a sense of volume and buttery smoothness. Fair notes of grapefruit and lime as well as a distinctive minerality come with the finish.

Food pairing

The wine is excellent consumed as an aperitif, but also as an accompaniment of any kind of green salads, seafood dishes or cheeses. It also pairs well with light antipasti and dishes with white meat, fish, and vegetarian cuisine.
