A blend of Sauvignon Blanc and Chardonnay this is an intensive but elegant wine with a lively acidity and a long, mineral-edged finish. Served cool it pairs well with mixed salads, pasta and fish dishes but would work well with soft cheeses and fruits as well as delicate creamy dessert.
Black Sea Terroir
Sauvignon Blanc, Chardonnay, Viognier
The harvest of the Sauvignon Blanc takes place on the first day of September and the one of the Chardonnay - two days earlier. Fermentation is carried out separately for each variety and continues for 20 days, after which the so called batonage (rising and stirring of the fine lees) is performed. The operation leads to an improvement of the organoleptic profile of the wine. The blending to the desired final expression takes place after the ripening stage of about two months. The wine was bottled on 03/31/2020.
The wine offers pleasant enjoyment when combined with various types of salads and light dishes. Cheeses are also a perfect choice to pair with - both soft and firm and ripe.
