Тhis is a late harvest sweet wine with a bright golden colour. It has a rich aroma of well ripened yellow pear and apple followed by honey nuances and fresh spices, typical for the varietal. The taste shows a perfect balance between acidity and sweetness and a hint of salinity that comes from the terroir. Тhis wine can be easily enjoyed by itself - slightly cooled but an excellent match could also be a fruit tart or a cheese plate.

Style: White sweet wine
Grape Variety: Petit Manseng
Vintage information: Alcohol – 11.5 об.% ; Residual sugars – 68.3 g/L; TA acidity – 7.3 g/L
Terroir: The 0,9 ha vineyard is located in the region of Kavarna town, less than 10 km away from the Black Sea. The climate is dominated by the constant breezes from the Black Sea which help in keeping the sugar levels and acidity in the grapes at balance. The soil is very rich and most work in the vineyards goes towards keeping the growth of the vines less vigorous. This is mostly done by hand, which allows consistent control of the quality of the grapes. The philosophy of Seewines is to follow entirely organic and biodynamic principles - both in the vineyards and the vinification. Petit Manseng is a varietal typical for South-West France for production of sweet wines.
Vinifcation:
The grapes are handpicked at the end of October when they reach their optimal ripeness. The fermentation is spontaneous, in temperature controlled stainless steel tanks, and lasts for a month. 50% of the wine undergoes a process of ageing in new, not toasted, French oak barrels for 4 months. This gives it more complexity and enhances its taste profile.
Tatsing notes:
Тhis dessert wine has a bright golden colour. The rich aroma captures from the first sip – first there are well ripened yellow pear and apple, followed by honey nuances and fresh spices, typical for the varietal. In the mouth the taste shows a perfect balance between acidity and sweetness, which gives it a profile of a nice, tender and easy to drink wine. The aftertaste is long with a slight salinity, a characteristic that comes from the terroir.
Food pairing:
Тhis wine can be easily enjoyed by itself - just cooled but also a very good combination with heavy cream deserts. An excellent match would also be a fruit tart or fruit salad.
